Cookie Monday…Mexican Hot Chocolate

on February 21, 2011

I am not really a big Martha Stewart fan, the only time I really watch her or even know that she is still around is when David Letterman is going all David Letterman on her. Like here, in what probably is the best Letterman moment in the last couple of years! My father-in-law also has some kind of sick obsession with her, I can’t really remember a visit to or from the in-laws that didn’t include some kind of crude reference to Martha and some kitchen appliance. So I guess this one is for you Big Guy!

I found this Mexican Hot Chocolate recipe on the Martha Stewart Cookie App on my iPhone, another prime example that the iPhone is a great kitchen tool. Just like a few weeks ago on Cookie Monday when I featured these Chocolate Chip Cookies also courtesy of my smart phone.

  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon coarse salt
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 3/4 cups sugar
  • 2 large eggs
  • 2 teaspoons cinnamon
  • 1/2 teaspoon chile powder (optional)

Get the full Martha instructions including video here.

Add the flour, cocoa, cream of tartar, baking soda and salt to a bowl and whisk to combine.

Cream the butter and Sugar, then add eggs and give a quick mix to combine.

Slowly add the flour mixture a little at a time to combine into a really nice chocolatey dough.

Now comes the genius part, must be why Martha is a billionaire, combine the remaining sugar, cinnamon and chili powder, I used ancho, and mix together.

Take the dough and roll it into balls and then roll in the cinnamon/sugar/chili mixture. Place on a lined baking sheet and bake for 10 minutes at 400. If you do more than one sheet at a time, make sure to rotate the sheets half way thru.

Let cool on the pan for a minute then transfer to a rack to fully cool.

This is a really simple and delicious cookie. Strong chocolate flavor with just the right amount of heat coming thru, they are very soft right out of the oven, but firm up quick. If you haven’t ever tried chocolate and chili together, this would be a good starter. It is an amazing combination, one that you will keep trying every time you see it somewhere. If you try them out, comment and let me know how they turned out for you.
